Phnom Penh, Cambodia
A Slavic hearth, kept
burning in Phnom Penh.
Czech and Slavic cooking meets an Asian-fusion table, a house brewery, and a copper still — all under one quietly grand roof.
Our story
Two kitchens,
one fire.
Bubbles begins with the dishes of Czech and Slovak grandmothers — slow braises, fresh-baked bread, dumplings pulled straight from the pot — then lets Cambodia answer back. Lemongrass stands in for bay leaf here, palm sugar for brown sugar there.
The result is a fine-dining room that feels inherited rather than invented: a long, unhurried evening, a kitchen that brews its own beer and distills its own gin, and a table set for people who notice the difference.
The Bubbles Lab
Make the spirit yourself.
A guided, hands-on gin-distilling session built for groups — friends marking an occasion, teams unwinding after a trip, travelers who want a story stronger than a souvenir.
-
Taste & choose
Work through a guided flight of botanicals — juniper, Kampot pepper, lemongrass, butterfly pea — and pick your blend.
-
Distill
Load the copper still and watch your blend take shape under a distiller's guidance.
-
Bottle & label
Fill, cork, and label your own bottle — the only one of its kind, made by your group.

Brewed and distilled,
not just served.
Every pour at Bubbles starts on site — a small brewery for Czech-style lagers and ales, and the same copper still behind the Bubbles Lab keeping the bar stocked with house gin.
The brewery
Czech brewing tradition in small batches — lagers and seasonal ales, tanked and tapped on site.
The distillery
One copper still, two jobs: house gin for the bar, and the centerpiece of every Lab session.
